Ingredients :

  • Tamarind 250gm
  • Jaggery 250gm
  • Red chili powder 1 tbsp
  • Dry ginger powder 1 tsp
  • Cumin powder 1 tsp
  • Salt 1 tsp
  • Sugar 2-3 tbsp

Method :

Soak tamarind in 4-5 cups of water and squeeze out all the pulp. Put ina clean pan with the jaggery, red chili powder, ground dry ginger,cumin powder, salt and sugar and let cook till thick. Strain through asieve and bottle when cool.

Ingredients :

  • 25 grams almonds (blanched)
  • 3 red chillies (roasted)
  • 25 grams peanuts (roasted)
  • 1 piece ginger
  • 1 tsp cumin seeds (roasted)
  • a few drops saffron essence
  • salt and chilli powder to taste

Method :

Grind all the above ingredients to a paste.

This chutney can be eaten immediately.

  • 75 grams raisins

Method :

Soak the plums in water for 15 minutes, and the raisins in a separate bowl of water for about 10 minutes.

Drain the water from both, mix, and grind to a paste along with the cumin and chilli powder.

Now mix in the lime-juice, food colouring and essence.

Decorate with nuts and cover with it foil.

Ingredients :

  • Finely chopped tomatoes 4-6
  • Lemon 4
  • Green chilies 6
  • Garlic cloves 6
  • Curry leaves 8
  • Mustard seeds a few
  • Mustard oil 1 cup
  • Onion seeds 1tsp
  • White cumin 1tsp
  • Red chili powder 1tsp
  • Ginger garlic paste 1tbsp
  • Salt as required

Method :

Heat the mustard oil in a pan and sauté the mustard seeds for 2-3 minutes. Then add the tomatoes, green chilies, garlic cloves, curry leaves, onion seeds, white cumin powder, red chili powder, ginger garlic paste and salt.

When mixture dries and the oil floats on top squeeze the juice of one lemon.

Sweet Chutney Recipe + Imli Ki Khatti Meethi Chatni Recipe

Ingredients :

  • a small ball of tamarind (of the size of a lemon)
  • 10 dry dates
  • 10 fresh dates
  • 25 grams raisins
  • 25 grams almonds
  • 1 tsp garam Masala
  • 1 tsp dry ginger powder
  • 1 tsp cumin seeds (roasted and pounded)
  • salt and chilli powder to taste
  • a few drops saffron essence
  • a few pistachios (sliced)

Method :

Soak the tamarind in- one cup of hot water for 15 minutes, and then squeeze out the pulp.

Also soak the dry dates in water for 10 minutes and then drain, removing the seeds.

Grind to a paste along with the remaining dates, raisins and almonds.

Heat the tamarind, adding garam masala, ginger powder, cumin, salt and chilli powder.

Now mix in the date and raisin paste.

Cook till thick.

Remove from fire, cool, mix in the essence and garnish with sliced pistachios.

This chutney can be eaten immediately.
