Raan Roast Recipe – 1:

Ingredients

  • Mutton leg 1
  • Egg 1
  • Raw papaya paste 1 cup
  • Yogurt 1/2 cup
  • All spice powder 1 tsp
  • Cumin powder 1 tsp
  • White pepper 1 tsp
  • Black pepper crushed 1 tbsp
  • Gram flour 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Red chili powder 3 tbsp
  • Vinegar 6 tbsp
  • Oil 3-4 tbsp
  • Green coriander for garnish (optional)
  • Food color 1 pinch
  • Salt to taste

Instructions

  • Make deep slits on the mutton leg with a sharp knife.
  • Now marinate it with vinegar and salt, leave it for 10 to 15 minutes.
  • In a mixing bowl mix oil, gram flour, white pepper, egg, black pepper, all spice powder, cumin powder, red chili powder, papaya paste, food color and ginger garlic paste.
  • Now coat meat with this batter and leave it for 2 to 3 hours.
  • Now put it in steamer and steam it for 25 to 30 minutes.
  • Then put it in pre-heat oven on 200c for 25 to 30 minutes.
  • In between baking baste it with butter or oil.
  • When its changes its color dish it out and garnish it green coriander

Raan Roast Recipe – 2: – 

Ingredients for Shehanshahi Raan Roast:

  • Raan 1
  • Papaya paste 1/2 cup
  • Yogurt 1/2 cup
  • Egg 1
  • Gram flour 2 tbsp
  • Red chili powder 3 tbsp
  • Crushed black pepper 1 tbsp
  • All spice powder 1 tsp
  • Cumin powder 1 tsp
  • Ginger garlic paste 2 tbsp
  • Red chili powder 1 tsp
  • Yellow food color 1 pinch
  • Vinegar 1 cup
  • Oil 3-4 tbsp
  • Butter 1/2 cup
  • Lahori salt to taste

Method:

  1. Mark cut on mutton raan with help of knife, then mix vinegar and lahori salt, spread over raan and cover with plastic for a day.
  2. Then in one mixing bowl, put yogurt, oil, gram flour, chopped white pepper, egg, chopped black pepper, chopped garam masala, chopped cumin, chopped red chili, papaya paste, food color and ginger garlic paste, mix it nicely and make paste of it.
  3. Now spread paste over raan and leave for 2 to 3 hours.
  4. Then put raan again in pot steam for 25 to 30 minutes on low flame.
  5. Now put steamed raan into preheated oven and bake for 25 to 30 minutes on 200 degrees C.
  6. Do brushing with butter in center.
  7. When color comes, take out in dish and serve.

Ingredients for Khara Masala Mutton:

  • Mutton 1/2 kg
  • Ginger garlic chopped 1 tbsp
  • Yogurt 250 gm
  • Onion 2-3
  • Cloves 4-5
  • Cinnamon 2 sticks
  • Small cardamoms 4-5
  • Bay leaves 1-2
  • Cumin seeds 1 tsp
  • Coriander seeds 1/2 tsp
  • Crushed black pepper 1 tsp
  • Red chili flakes 1 tbsp
  • Green coriander 1/2 bunch
  • Oil 3-4 tbsp
  • Salt to taste

Method:

  • Firstly, put oil in pan, put cinnamon, cloves, small cardamoms and bay leaves and toast it.
  • Then add onion and ginger garlic and fry it.
  • Now add mutton and roast it nicely.
  • Then add cumin, whole coriander, chopped black pepper, chopped red chili, salt and yogurt, mix it nicely, add water as required and cook until mutton is tendered.
  • When mutton is tendered and masala is roasted well, take out i dish, garnish with green coriander and serve.

Ingredients For Raan Dam Pukht:

  • Mutton leg 1 whole
  • Onion 2-3
  • Coriander leaves 1/2 bunch
  • Ginger garlic paste 2 tbsp
  • Ginger 1 medium piece
  • Green chilies 2-3
  • Mint leaves 1/4 bunch
  • Lemon (juice) 2 lemons
  • Papaya paste 2 tbsp
  • Vinegar 5 tbsp
  • All spice powder 1 tsp
  • Cumin powder 1 tbsp
  • Crushed coriander 1 tbsp
  • Chaat masala 1 tbsp
  • Turmeric 1 tsp
  • Chili powder 1 tbsp
  • Salt to taste
  • Butter 5 tbsp
  • Oil 3 tbsp

Method:

  1. First add mutton leg, add salt, lemon juice, papaya paste marinate it and keep it on aside.
  2. Now put butter, pour oil add onions for frying.
  3. When the onions becomes soft, then roast it with mutton leg.
  4. When the mutton leg changes its color then add ginger garlic paste, vinegar, chopped cumin , turmeric, chopped red chilies, chopped coriander, chopped garam masala, roast it for 1 to 2 minutes, pour water, cover and let it cook.
  5. After 25 to 30 minutes when its color changes then add chopped coriander, mint, chopped ginger then mix it well.
  6. In the end take it out in a platter, add chaat masala, sprinkle some ginger then serve.
