Tomato Chutney (Tamatar Chutney)
- 8 oz. tomatoes
- 1 onion
- 2 tablespoons vinegar
- 2 teaspoons chilli powder
- salt to taste
- 1 teaspoon sugar
- 2 tablespoons oil
- 1/2 teaspoon mustard seeds sprinkle with salt
Scald, peel and chop the tomatoes finely. Chop the onion and combine with the tomatoes.
Place in a bowl with the vinegar, chilli powder, salt and sugar. Heat oil in a pan and fry mustard seeds. As soon as they change colour combine tomato mixture with the remaining ingredients and simmer until chutney thickens. Bottle when cool.
